We LOVE pomegranates, and this salad is a beautiful way to showcase them! Healthy & fresh!
- cucumber
- pomegranate arils
- fresh parsley or basil, chopped
- onions (spring onions work wellm but use what you have)
- juice of a lime (or a lemon)
- Olive oil
- Feta cheese
1. Thinly slice and halve the cucumber, and finely chop some onion
2. Add to a bowl with the pomegranate arils and fresh herbs
3. Squeeze over some lemon or lime, drizzle with olive oil, season and top with feta
