An easy way to use those delicious brinjals!
- 3-4 Brinjals
- 4 cloves of garlic
- Fresh thyme
- Olive Oil
1. Preheat the oven to 220 degrees.
2. Quarter the brinjals and score them lengthways. Place into a baking dish.
3. Roughly chop the garlic and press into the brinjals. Scatter over the fresh (destalked) thyme leaves, drizzle with olive oil and season.
4. Bake for about 30 minutes.
