Roasted Veggie Medley

Quick and easy way to use up all your veggies!  Great as a side or quick lunch. 


- 2 Tbsp Olive Oil

- Brinjal, julienned

- Turnips, sliced

- carrots, julienned

- Baby marrow, sliced

- Kale, chopped

- 2 Cloves garlic, minced

- Fresh herbs, finely chopped

- Salt and Pepper for taste


1. Preheat oven to 200 degrees, and grease baking tray with oil

2. Place brinjal, turnips and carrots onto baking tray and bake for 30 min. Then add baby marrow and kale with some olive oil and bake for 30 min.

3. Once tender, remove from oven and add garlic, herbs and season for taste.
