- 1 Horned CucumberKiwano
- 1 red sweet pepper
- 1 clove of garlic
- 1 red onion
- 4 ripe tomatoes
- 1 Cayenne Pepper
- 5 g fresh coriander
- 10 g fresh basil
- 1 lime
- 1 tbsp honey or agave syrup
- Salt
1. Slice the kiwano/horned cucumber lengthwise, scoop the flesh out of the skin and place in a bowl.
2. Halve the sweet pepper, remove the seeds and slice the flesh into 5 mm cubes. Thinly slice the garlic. Finely chop the onion. Remove the seeds from the tomato and finely slice the flesh into 5 mm cubes. Halve the cayenne pepper lengthwise, remove the seeds and finely slice the flesh. Add all the ingredients to the kiwano/horned cucumber.
3. Finely chop the coriander and basil leaves and add. Squeeze the lime. Season the salsa with lime juice, honey and salt.
