- 150 g rocket (4 big handfuls)
- 15 g parmesan, shaved finely using a vegetable peepler
Balsamic Dressing:
- 1 Tbsp balsamic vinegar
- 2 1/2 Tbsp extra virgin olive oil
- 1/2 Tsp each salt and pepper
1. Shake Balsamic Dressing in jar.
2. Place rocket in a bowl, drizzle with Dressing then toss.
3. Transfer to serving bowl. Shave over parmesan. Serve immediately.
