- 1 large onion, chopped
- 1 Green bell pepper, chopped
- 2 tbsp peanut oil
- 400 g morogo, washed and trimmed
- 1 large tomato, chopped
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup peanut butter, use chunky if desired
1. Cook onion and green pepper in peanut oil in a skillet for about 3-5 minutes, or until tender.
2. Add spinach and tomato to skillet.
3. Cover and cook on low heat for about 5 minutes, or until spinach is tender.
4. Stir in all remaining ingredients. Cook until hot throughout.
5. Serving suggestion: Server with hot cooked rice or couscous.
