Winter Salad
- 2 Cups baby spinach
- 2 Cups baby kale
- 1 Cup pomegranate arils
- 1 Avocado
- 1/4 Red onion
- 1/4 Cup crumbled goat cheese
Balsamic Vinaigrette
- 3/4 Cup olive oil
- 1/4 Cup balsamic vinegar
- 1/8 Tsp black pepper
- 1 Clove garlic, minced
Make the Salad Dressing
1. Whisk all ingredients together and season with salt and pepper.
Assemble the Salad
1. De-seed the pomegranate and thinly slice the onion.
2. Add greens, pomegranate, goat cheese, red onion, and avocado to a large bowl.
3. Drizzle with vinaigrette, gently toss, and serve immediately.
