It's the start of avocado season! And we're kicking it off with an all-time favourite - avo on toast, with a thai inspired twist. Perfect for breakfast, lunch or dinner!
- bread slices
- butter
- avocado
- cottage cheese (you could also use sour cream, cream cheese or creme fraiche)
- limes
- fresh chilli, thinly sliced (de-seed if you like)
- salt & pepper
- soft poached or boiled egg (optional)
1. Toast the bread slices, and smear with butter
2. Mash together avocado and cottage cheese, and dollop on the toasted bread
3. Season with salt & pepper, a squeeze of lime juice, and some fresh chilli
4. Top with an egg, if you like, and enjoy immediately
